Apple and Sausage Crock Pot Stuffing

This apple and sausage stuffing combines cubed dry white bread with andouille sausage, sautéed onions and celery, dried herbs, fresh diced apple, and chicken stock. Slow-cooked in a butter-greased crock pot, it yields a savory, moist stuffing blending meatiness, sweetness, and herb flavors.

Description

The recipe layers dried bread cubes with cooked sausage chunks, then mixes in a sautéed blend of onions, celery, poultry seasoning, rosemary, and parsley. Fresh Golden Delicious apple adds a subtle fruity sweetness. Chicken stock moistens the mixture which is gently tossed before being transferred to a butter-greased crock pot. Cooking on low for five hours slowly melds the flavors and softens the bread, creating a classic moist stuffing.

The slow cooking method allows the sausage and aromatic vegetables to evenly infuse the bread, while the apple contributes a hint of brightness and sweetness. The dried herbs add depth and balance. This stuffing can be served alongside poultry or as a comforting holiday side dish.

Ingredients

Servings
  • 10 cups white bread cubed, dry
  • 1 andouille sausage pre-cooked, brand: Johnsonville, packages
  • 2 tablespoons butter
  • 2 cups onion white, diced
  • 1 1/2 cups celery chopped
  • 2 tablespoons poultry spice
  • 1 tablespoon rosemary dried
  • 2 tablespoons parsley dried
  • 1 cup apple peeled and cored, Golden Delicious variety, large, approx. 1.5 diced
  • 1 1/2 cups chicken stock
  • 2-3 tablespoons butter used to grease crockpot

Instructions

  1. Grease a large 6 Qt/ 5.6 L s crockpot with 2-3 tbsp butter and set aside.
  2. Place dried bread cubes in a very large bowl - my largest tupperware bowl did the trick. Chop up the sausage and place in with the bread cubes.
  3. Cook the onions over medium heat in a large skillet in the two tbsp of butter until evenly cooked.
  4. Add the celery, poultry seasoning, rosemary and parsley and cook for 4-5 minutes until the celery starts to soften.
  5. Pour the onion mixture over the bread cubes in bowl. Mix in chopped apple..
  6. Pour the chicken stock over the bread and toss the stuffing in the bowl, over and over until the stuffing is coasted and mixed. Try not to stir if possible.
  7. Place into the greased crockpot. Cook on low for 5 hours.
  8. Serve and enjoy!
