Apple bacon jam

Apple Bacon Jam is a savory-sweet spread made by cooking smoked bacon with onions, garlic, diced apples, and a mix of cinnamon, brandy, brown sugar, and molasses until thick and sticky. The result is a rich, flavorful jam with tender bits of bacon and fruit that can be enjoyed on breads, sandwiches, or as a condiment.

Description

This jam starts by frying sliced smoked bacon in a skillet over medium-high heat until the fat renders and the bacon begins to crisp. Finely chopped onions, garlic, and diced apples are then added and cooked until the onions become translucent and the bacon crisps further. Excess fat is drained to leave just enough to keep ingredients moist without greasiness.

Seasonings including cinnamon, water, brandy, brown sugar, and molasses are stirred in and brought to a boil before simmering for 20 to 30 minutes. This slow cooking thickens the mixture into a sticky consistency that melds the smoky, sweet, and tangy flavors well.

Once cooled, the jam is stored in a sealed container in the refrigerator and used as a versatile topping or spread. Its complex flavor profile makes it suitable for enhancing plain dishes or elevating sandwiches and cheeses.

  • 7 oz Bacon smoked
  • ¼ onion large, or ½ small
  • 1 clove garlic
  • 2 oz apple
  • ¼ teaspoon cinnamon
  • 2 tablespoon water
  • 2 tablespoon brandy
  • 2 tablespoon brown sugar
  • 1 tablespoon molasses

Instructions

  1. Slice the bacon and fry in a small/medium skillet over a medium-high heat until the fat is starting to render, stirring regularly, around 10 minutes.
  2. Finely chop the onion and garlic, peel and finely dice the apple, and add all to the pan. Cook, stirring regularly until the onions have softened and gone translucent and the bacon is crisping, another roughly 10 minutes. If you have excess fat in the pan, drain it off - you want a little left but no more than around a tablespoon or two.
  3. Add the cinnamon, water, brandy, sugar and molasses and stir in well. Once it boils, reduce to a simmer and allow to cook for around 20-30 minutes, stirring occasionally, until it is nicely sticky.
  4. Remove the bacon-apple mixture from the pan, draining off any remaining excess fat as you do so, to a sealable jar or similar. Allow it to cool and store in the fridge until needed.
