Ingredients
- 200 g (2 cups) old-fashioned rolled oats (not instant)
- 106 g to 165 g (½ to ¾ cup) light brown sugar (adjust based on desired sweetness)
- 120 g (1 cup) chopped pecans, divided (can substitute with walnuts or almonds)
- 85 g (½ cup) raisins
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- ¼ teaspoon freshly grated nutmeg , optional
- ½ teaspoon kosher salt
- 2 large eggs
- 480 g (2 cups) milk (preferably whole, but any milk percentage or non-dairy alternative can be used)
- 1 tablespoon vanilla extract
- 55 g (4 tablespoons) unsalted butter, melted, plus extra for greasing the dish
- 2 tart-sweet baking apples (like Honeycrisp or Gala), peeled and cut into ½-inch chunks
Instructions
- Preheat the oven to 350°F. Grease a 9-inch baking dish with butter and set an oven rack in the middle position.
- In a medium bowl, combine the oats, light brown sugar, raisins, baking powder, cinnamon, and nutmeg.
- In another bowl, whisk the eggs to break them up, then add the milk, vanilla, and salt, whisking until everything is well combined.
- Pour the milk mixture into the oat mixture, add the melted butter, and stir until well combined. Gently fold in the apples and ½ cup of the nuts.
- Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of nuts on top.
- Bake for 40-45 minutes, until the top is golden and the oats are set.
- Serve warm or at room temperature.
