Ingredients
- 2 cups old-fashioned oats 200 g
- 1 cup milk 240g
- 2 egg large
- 1/4 cup PLAIN yogurt
- 1/4 cup butter melted, 60g
- 2 teaspoons vanilla extract
- 1/4 cup maple syrup 80g or 60ml
- 1 1/2 teaspoons cinnamon
- pinch salt
- 1 teaspoon baking powder
- 1/3 cup raisins 45g
- 1 pound apple 3 medium apples
- 1/4 cup walnuts chopped
- 2 white chocolate optional, cubes
Instructions
- Preheat the oven to 375°F (190°C).
- Add oats, milk, eggs, yogurt, butter, vanilla, maple syrup, cinnamon, salt, baking powder, and raisins (all the ingredients except walnuts, apples, and chocolate) to a large bowl. Whisk until well combined.
- Peel the apples (optional) and cut into cubes. Add to the oatmeal mixture and stir until combined.
- Grease a small baking dish with butter (I used a 9-inch/23 cm deep dish pie plate), pour the oatmeal mixture into the baking dish.
- Sprinkle with the walnuts and chopped chocolate (if using), press them slightly into the oatmeal.
- Bake for 40 minutes or until set in the center. If the oatmeal is browning too much in the last 5 minutes, cover it loosely with aluminum foil (it's important that the top of the oatmeal gets nicely golden brown - it will improve flavor and make the top crunchy - you'll love these crispy bits of oats and apples).
- Enjoy!
