Ingredients
- 200 g old-fashioned rolled oats not instant, 2 cups
- 106 g light brown sugar adjust based on desired sweetness, up to 165 g (½ to ¾ cup
- 120 g pecans can substitute with walnuts or almonds, 1 cup, chopped, divided
- 85 g raisins
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- ¼ teaspoon nutmeg optional, freshly grated
- ½ teaspoon kosher salt
- 2 large egg
- 480 g milk preferably whole, but any milk percentage or non-dairy alternative can be used, quantity 2 cups
- 1 tablespoon vanilla extract
- 55 g unsalted butter 4 tablespoons, melted, plus extra for greasing the dish
- 2 baking apples like Honeycrisp or Gala), peeled and cut into ½-inch chunks, tart-sweet
Instructions
- Preheat the oven to 350°F. Grease a 9-inch baking dish with butter and set an oven rack in the middle position.
- In a medium bowl, combine the oats, light brown sugar, raisins, baking powder, cinnamon, and nutmeg.
- In another bowl, whisk the eggs to break them up, then add the milk, vanilla, and salt, whisking until everything is well combined.
- Pour the milk mixture into the oat mixture, add the melted butter, and stir until well combined. Gently fold in the apples and ½ cup of the nuts.
- Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of nuts on top.
- Bake for 40-45 minutes, until the top is golden and the oats are set.
- Serve warm or at room temperature.
