Description

Apple Bread uses freshly shredded apples from firm varieties to retain texture during baking. The batter is mixed gently after combining the moist apple and sugar mixture with oil, eggs, vanilla, nuts, raisins, and a spiced flour blend including cinnamon and nutmeg. Baking in loaf pans at 350°F produces a golden crust with a tender interior. The inclusion of both baking powder and baking soda helps achieve the right rise and crumb.

The final loaf suits serving sliced at room temperature or lightly toasted. It pairs well with butter or cream cheese and works as a breakfast staple or afternoon treat.   • 4 cups apple Use apples that are flavorful and firm, and hold their shape when baking, such as Haralson, Granny Smith, Honeycrisp, etc, fresh, shredded, from approximately 4 large peeled apples
  • 2 cups sugar
  • ½ cup vegetable oil
  • 2 egg large
  • 2 teaspoons vanilla extract pure
  • 1 cup pecans optional (I love the ones from Trader Joe's!, chopped, roasted, or walnuts
  • 1 cup raisins or Craisins or chopped dates
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt Morton brand
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F. Grease and flour two 8" x 4" bread pans and set aside.
  2. Using the large holes on a box grater, shred peeled apples down to the cores; discard the cores, until you have 4 cups of shredded apple.
  3. In a large bowl, fold together shredded apples and sugar, and let sit for 15 minutes until sugar dissolves. There will be a lot of liquid.
  4. Add oil, eggs, vanilla, pecans, and raisins, and stir to incorporate.
  5. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Fold dry ingredients into the apple mixture, just until mixed. Divide evenly amongst prepared loaf pans.
  7. Bake 55 minutes, or until golden and center tests done with a toothpick. Remove pans from oven to cooling rack and let cool for 10 minutes. Then turn breads out of pan onto rack to cool completely before slicing.

Notes

  • Omitting nuts and raisins is fine; the bread still turns out well.
  • Use firm, flavorful apples like Granny Smith or Honeycrisp to hold their shape during baking.
  • Cool the loaves thoroughly before slicing to maintain structure.
  • Store wrapped at room temperature to keep the bread moist.
