Apple Butter Oatmeal Breakfast Cookies

I love making these apple oatmeal breakfast cookies for meal prep each week! Made with apple butter, maple syrup, almond butter, grated apple and spices, they are hearty, crunchy, nourishing and satisfying. The best breakfast or snack!

Ingredients

  • 1 ¾ oats
  • 1 cup all-purpose flour
  • cup Flaxseed ground
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 1 egg large
  • ½ cup apple butter
  • ½ cup almond butter creamy
  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup
  • 1 medium apple about ⅔ cup, grated
  • cup walnuts chopped

Instructions

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a bowl, stir together the oats, flour, flaxseed, baking soda, cinnamon and salt.
  3. In a large bowl, whisk together the egg and apple butter. Whisk in the almond butter, vanilla extract and maple syrup. Add the dry ingredients and grated apple. Add the walnuts. Stir until everything is just combined.
  4. Scoop the dough onto a baking sheet - I do about 1 ½ inch scoops and set them 2 inches apart. You can use the bottom a glass to gently press on each scoop to flatten the cookie, otherwise they will be a little mound of cookie.
  5. Bake for 10 to 12 minutes, or until the cookie is set. Let cool completely. Store sealed for up to 5 days. These are also great served with extra apple butter!
