Description

The recipe combines all-purpose flour, brown and granulated sugars, baking powder, salt, and cinnamon, mixed with eggs, vegetable oil, apple cider, and milk. The batter is spooned into a prepared muffin tin and baked until a toothpick inserted in the center comes out clean. The muffins develop a soft crumb infused with warm cinnamon and apple notes from the cider.

  • 2 cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 ½ tsp cinnamon
  • 2 egg beaten
  • 2 Tbs vegetable oil
  • ½ cup apple cider or juice
  • ¼ cup milk
  • Topping:
  • ¼ cup butter melted
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 1 Tbs cinnamon

Instructions

  1. Preheat oven to 350.
  2. Spray a 12 count muffin tin with non-stick cooking spray
  3. In a mixing bowl, whisk together your flour, brown sugar, sugar, baking powder, salt, and cinnamon and mix until combined.
  4. Add in your eggs, oil, apple cider and milk and stir until just moistened.
  5. Fill your tins about 3/4 full with batter and bake for about 15-20 minutes or until a toothpick inserted in center comes out clean.
  6. Let cool for a little bit.
  7. Meanwhile in bowl melt butter, in another bowl whist together your sugars and cinnamon.
  8. Dip the tops of the muffins in butter then in your cinnamon sugar mixture.
