Description
The recipe combines all-purpose flour, brown and granulated sugars, baking powder, salt, and cinnamon, mixed with eggs, vegetable oil, apple cider, and milk. The batter is spooned into a prepared muffin tin and baked until a toothpick inserted in the center comes out clean. The muffins develop a soft crumb infused with warm cinnamon and apple notes from the cider.
Once baked and cooled slightly, the muffin tops are dipped in melted butter and then coated in a mixture of cinnamon and sugar, creating a sweet, slightly crispy topping that contrasts with the soft interior. This final step adds texture and a burst of cinnamon flavor on every bite.
Ingredients
- 2 cups all-purpose flour
- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 ½ tsp cinnamon
- 2 egg beaten
- 2 Tbs vegetable oil
- ½ cup apple cider or juice
- ¼ cup milk
- Topping:
- ¼ cup butter melted
- ¼ cup brown sugar
- ¼ cup granulated sugar
- 1 Tbs cinnamon
Instructions
- Preheat oven to 350.
- Spray a 12 count muffin tin with non-stick cooking spray
- In a mixing bowl, whisk together your flour, brown sugar, sugar, baking powder, salt, and cinnamon and mix until combined.
- Add in your eggs, oil, apple cider and milk and stir until just moistened.
- Fill your tins about 3/4 full with batter and bake for about 15-20 minutes or until a toothpick inserted in center comes out clean.
- Let cool for a little bit.
- Meanwhile in bowl melt butter, in another bowl whist together your sugars and cinnamon.
- Dip the tops of the muffins in butter then in your cinnamon sugar mixture.
