Apple Cider Vinaigrette

Apple Cider Vinaigrette combines apple cider vinegar with a neutral oil, maple syrup, and Dijon mustard to create a balanced dressing with tangy, sweet, and mildly sharp flavors. The vinaigrette emulsifies into a smooth liquid ideal for brightening salads or adding a subtle sweetness to greens. Its easy preparation allows for quick assembly while maintaining a fresh taste.

Description

The Apple Cider Vinaigrette recipe merges the acidity of apple cider vinegar with the smoothness of a neutral oil and the sweetness of pure maple syrup. Dijon mustard acts as an emulsifier, helping to blend and thicken the dressing slightly while adding a touch of sharpness. Whisking or shaking the ingredients together produces a smooth, well-mixed vinaigrette.

This dressing offers a harmonious balance of sweet, tangy, and savory notes, making it suitable for a range of leafy salads or as a finishing drizzle over roasted vegetables. It can be served immediately or stored chilled.

When refrigerated, the vinaigrette should be brought to room temperature and shaken before using to recombine the ingredients. It holds its freshness for up to one week but is best used sooner to maintain its bright flavors. Freezing is not recommended as the emulsification breaks down upon thawing.

Ingredients

Servings
  • ½ cup neutral cooking oil avocado or olive, generic cooking oil
  • ¼ cup apple cider vinegar
  • 3-4 Tbsp. pure maple syrup or honey
  • 2 tsp. Dijon mustard or yellow
  • salt to taste, pinch

Instructions

  1. Add ingredients to a 16-ounce mason jar and shake until well combined. Alternatively, you can add the ingredients to a high-speed blender or food processor and blend for 10-20 seconds, or until smooth.
  2. Serve immediately or store apple cider vinaigrette in the refrigerator for up to 1 week between servings. Bring to room temperature and shake well before using.

Notes

  • You can prepare this vinaigrette up to two days in advance and keep it refrigerated until needed.
  • Store the dressing in an airtight container in the fridge for up to one week; its flavor and brightness diminish gradually over time.
  • Freezing this salad dressing is not advised because it damages the emulsion, leading to permanent separation.
