  • ½ cup vegetable oil

  • 1 cup apple I used Honeycrisp, grated
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ tablespoon cinnamon
  • ½ cup raisins optional, or vegan chocolate chips
  • ½ cup walnuts optional, chopped

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, mix together the applesauce, oil, sugar, apple, and vanilla in a bowl. Then add the remaining ingredients and whisk until thoroughly combined.
  3. Pour the batter into a greased loaf pan and bake for 50 to 55 minutes.

Notes

  • Peel apples before grating to avoid stringy skin pieces in the bread.
