Description

Apple Cinnamon Muffins feature a batter enriched with plain yogurt, melted butter, and milk mixed with cake flour, brown sugar, baking powder, baking soda, cinnamon, and salt to provide leavening and spice. Chopped apple is folded in for bursts of fruit throughout the tender crumb. The batter is poured into a greased muffin pan and optionally topped with sliced apple and cinnamon sugar for a textured surface.

  • 1 medium apple chopped
  • ½ medium apple sliced
  • ½ cup PLAIN yogurt room temperature
  • 1 tablespoon milk room temperature
  • 1 large egg room temperature
  • ¼ cup butter salted; melted and cooled
  • 1 cup cake flour or pastry flour
  • cup brown sugar 80 grams total, if you double the recipe this amount, + 1 tablespoon
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon cinnamon
  • 1 pinch salt

*Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.

Instructions

  1. Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.
  2. In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.
  3. In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
  4. Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.
  5. Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!
