Apple Cinnamon Muffins
Description
Apple Cinnamon Muffins feature a batter enriched with plain yogurt, melted butter, and milk mixed with cake flour, brown sugar, baking powder, baking soda, cinnamon, and salt to provide leavening and spice. Chopped apple is folded in for bursts of fruit throughout the tender crumb. The batter is poured into a greased muffin pan and optionally topped with sliced apple and cinnamon sugar for a textured surface.
Baked at 350°F, the muffins yield moist, lightly sweetened pastries with tender texture and warm cinnamon flavor paired with fresh apple's natural tartness and juiciness. The use of yogurt adds moisture and subtle tang.
These muffins serve well for breakfast or as a snack. They store well up to three days at room temperature when wrapped with paper towels to control moisture. They also freeze well after cooling, allowing make-ahead preparation.
Using room temperature ingredients ensures even mixing and proper rise. Choosing varieties like Gala or Braeburn apples can balance sweetness and texture within the muffins.
Ingredients
- 1 medium apple chopped
- ½ medium apple sliced
- ½ cup PLAIN yogurt room temperature
- 1 tablespoon milk room temperature

- ⅓ cup brown sugar 80 grams total, if you double the recipe this amount, + 1 tablespoon
- 1 teaspoon baking powder

*Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.
Instructions
- Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.
- In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.
- In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
- Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.
- Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!
