This Apple Cinnamon Overnight Oats recipe is an easy make-ahead breakfast. The oats are ultra creamy and studded with bites of fresh sautéed apples with cinnamon.

Ingredients
for a large batch of the apple cinnamon mixture:
- 2 to 3 large firm apples peeled, cored and diced to 1/2" pieces, to equal 4 cups of diced apples (I like to use Honeycrisp or Haralson apples, but any firm, crisp apple will work.)
- ¼ c. packed brown sugar
- ½ tsp. cinnamon
- ¼ tsp. kosher salt
- pinch nutmeg
- ½ c. fresh pressed apple cider
- ¼ c. water
- 1.5 T. cornstarch
for each SINGLE SERVING of oats:
- ½ c. old fashioned oats
- 2 T. steel cut oats
- ½ c. low-fat milk
- ⅓ c. low-fat plain yogurt
- ½ c. prepared apple cinnamon mixture
- 1 tsp. honey
- 1 tsp. chia seeds
- ⅛ tsp. cinnamon
- sliced almonds and additional apple cinnamon mixture for topping if desired

Instructions
- This recipe makes a large batch of the apple cinnamon mixture and then gives quantities and directions for making single servings of the overnight oats. This allows you to make up as many individual servings as you like. The apple cinnamon mixture should allow for 6 to 8 servings, depending on how much you use for each serving. The apple cinnamon mixture keeps well in the refrigerator for up to six days. The combined oats mixture keeps well in the refrigerator for up to three days.
for a large batch of the apple cinnamon mixture:
- In a medium saucepan over medium to medium-high heat, stir together all ingredients for the apple mixture.
- Stir regularly until mixture starts to boil. Once boiling, turn heat down to low and cook for another 5 to 10 minutes, stirring frequently, until mixture is thickened and apples are tender. I like the apples softened, but with a little bite left. Remove saucepan from heat.
for each SINGLE SERVING of oats:
- In a single serving bowl or jar, stir together all ingredients for the oats. Cover and refrigerate overnight.
- The following morning, give the oats mixture a little stir and then top with sliced almonds and additional apple cinnamon mixture, if desired. Combined oats mixture keeps well in the refrigerator for up to three days.
