Apple Cinnamon "Perfect" Oatmeal

This Apple Cinnamon Oatmeal with Nutmeg and Almonds is sweetened with maple syrup and an easy trick makes the oats perfectly non mushy!

Ingredients

  • 1/2 tablespoon butter
  • 1 apple diced (about 1 cup)
  • 1/2 tsp. ground cinnamon
  • 1 pinch ground nutmeg
  • 1/4 cup almonds or chopped walnuts, sliced
  • 2 cups water
  • 1 cup old-fashioned oats
  • 1/4 tsp. kosher salt
  • 2 tablespoons maple syrup
  • milk optional, whole milk, cream, or yogurt, for serving

Instructions

  1. Melt butter in saucepan over medium heat. Add apples, cinnamon, and nutmeg; stir until coated.
  2. Sauté over medium heat until diced apples are soft (about 5 minutes, depending on how small you chopped them). Add the almonds and stir to coat everything in the butter and spices.
  3. Add water and salt. Bring to a boil.
  4. Add oats, stir once, and remove from heat and cover. Let sit covered for 15-20 minutes, or until oats have fully absorbed the water. Stir in maple syrup (2 tablespoons).
  5. When finished, serve with a splash of whole milk, cream, or yogurt on top (optional).

Notes

  • Save leftovers in the fridge for about a week for easy breakfast meal prep. If you reheat in the microwave, you may need to add more water because it tends to dry out over time. I like to make a big batch over the weekend, and divide into individual containers. When I am ready to eat, I a couple of tablespoons of water and microwave for one minute.
