  • 1 tablespoon ground flax seeds
  • 1 ¾ cups plant-based milk vanilla flavor, plain or chocolate will work
  • cup vegetable oil
  • 1 apple Honeycrisp variety, cored, grated or finely diced, moisture pressed out with a napkin
  • 1 ½ teaspoon vanilla extract
  • 2 cups all-purpose flour whole wheat flour will work
  • 1 ½ tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 ½ teaspoon ground cinnamon

Instructions

  1. Turn on your waffle iron.
  2. In a small bowl, whisk together the warm water and ground flax seeds until thoroughly combined. Set aside for 10 minutes.
  3. In a medium bowl, whisk together the plant-based milk, vegetable oil, grated apple, and vanilla extract. Set aside.
  4. In a large bowl, whisk together the flour, both sugars, baking powder, salt, and ground cinnamon.
  5. Create a well in the center of the dry ingredients and pour in the milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.
  6. Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.

Notes

  • Make waffles in batches and store leftovers in an airtight container in the refrigerator for up to 2 days.
  • For longer storage, freeze waffles after flash freezing on a baking sheet, then place in freezer bags with parchment paper between waffles.
