Apple Crumble Muffin

Apple Crumble Muffins combine chunks of apple with warm spices like cinnamon, ginger, and allspice, suspended in a batter made from both all-purpose and whole wheat flours. The topping blends brown sugar, oats, and cinnamon for a crumbled texture and added sweetness. These muffins offer a tender, somewhat fluffy crumb with a textured, slightly crisp topping, making them a cozy choice for breakfast or a snack.

Description

Apple Crumble Muffins feature a moist batter enriched with buttermilk and butter, providing a tender crumb. The apples are finely chopped to distribute fruit flavor throughout the muffin, complemented by cinnamon, ground ginger, and a touch of allspice for warmth. The topping, with rolled oats and brown sugar mixed with melted butter, creates a crunchy contrast atop the soft muffins once baked. Baking at 375 degrees Fahrenheit ensures the muffins cook through with a light springy top that signals doneness.

The balance of whole wheat and all-purpose flours delivers a texture that is hearty yet delicate, while the mild spices help enhance the natural sweetness of the apples. These muffins work well as a breakfast item or alongside tea or coffee for a satisfying snack. Because the apples are folded in gently, the batter remains somewhat airy, preventing the muffins from becoming dense.

Servings

Muffins:

  • 1 egg
  • ½ cup buttermilk
  • ¼ cup butter melted
  • 1 teaspoon vanilla extract
  • ¾ cup brown sugar packed
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • 1/8 teaspoon allspice
  • 1 teaspoon baking soda
  • 1 ½ cups apple 1 med apple = 3/4 c chopped, so about 2-3 apples, depending on size, chopped

Topping:

  • ¼ cup brown sugar packed
  • ¼ cup all-purpose flour
  • 2 Tablespoons rolled oats
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons butter melted

Instructions

  1. Preheat the oven to 375 degrees F. Line a 12 cup muffin pan with paper liners.
  2. In a large bowl, whisk together the egg, buttermilk, butter, vanilla, and brown sugar, stirring until the sugar has dissolved.
  3. Use a food processor to chop the apples.
  4. Mix flour, baking soda and spices until well combined. Add to the liquid mix and stir until just combined.
  5. Gently fold in apples. Don’t worry if the mixture seems somewhat “fluffy.”
  6. Use a scoop or tablespoon to fill each muffin cup a generous ¾ full.
  7. To make the topping, stir together brown sugar, flour, rolled oats, and cinnamon in a small bowl. Mix in the melted butter (I used my fingers) until well blended. Sprinkle over the tops of the muffins.
  8. Bake for 25 minutes, or until the tops of the muffins spring back when lightly pressed. Do not overbake.
