  • 2 teaspoons cinnamon
  • 2 egg
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 cups apple peeled and chopped

Glaze

  • 1-1/2 cups powdered sugar
  • 3 tablespoons milk

Instructions

Apple Fritter Apple Cinnamon Muffins

  1. Preheat oven to 350 degrees F. Spray a mini muffin pan with cooking spray.
  2. Peel and chop the apples. 
  3. In a large bowl, stir together flour, baking powder, salt, sugar, and cinnamon.
  4. In a large measuring cup, add eggs and beat with a fork.
  5. In the same measuring cup, pour in the milk and vanilla.
  6. Pour the egg and milk mixture into the bowl with the dry ingredients and stir until combined.
  7. Stir in the chopped apples.
  8. Pour the batter into a mini muffin pan or pans. Makes 24 - 36 muffins.
  9. Bake in a preheated oven for 15 minutes.
  10. Remove and let cool. Meanwhile, make the glaze.

Glaze

  1. In a medium bowl add powdered sugar and 3 tablespoons of milk. Stir until lumps are removed. May need to add more milk if it is too thick.
