  • 2 cups all-purpose flour 282 grams
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup light brown sugar 150g
  • 1/2 cup vegetable oil
  • 2 egg large
  • 1/2 cup milk
  • 1/2 cup applesauce unsweetened
  • 1 teaspoon vanilla extract pure
  • 1 cup apple peeled, chopped

Instructions

  1. Preheat the oven to 350°F. Spray an 8 X 4-inch loaf pan with baking spray or line with parchment paper. Set aside.
  2. Whisk flour, baking powder, baking soda, salt, ginger, and cinnamon in a large bowl.
  3. Whisk together brown sugar, oil, eggs, milk, applesauce, and vanilla extract in a separate bowl.
  4. Add wet ingredients to dry ingredients. Stir just until combined. It’s okay for some streaks of flour to remain.
  5. Gently stir in the chopped apple. Spread the batter into the prepared pan.
  6. Bake for 60-65 minutes until a skewer inserted into the center of the loaf comes out clean.
