  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat oven to 375℉. Season a 2 to 3 pound pork loin with 1 1/2 teaspoons salt and 1/2 teaspoon black pepper.
  2. Heat 1 tablespoon olive oil in a heavy, oven-safe skillet over medium-high heat. Sear the loin in the skillet until all sides are browned, about 2 to 3 minutes per side.
  3. In a small bowl, whisk together 2 tablespoons dijon mustard and 1 tablespoon apple cider vinegar. Brush over pork roast.
  4. Place skillet in the oven and cook pork to an internal temperature of 145℉, about 30 to 40 minutes depending on the size of the roast. Use a probe thermometer for accuracy.
