Apple Muffins

Apple Muffins combine a thick batter enriched with sugar, eggs, oil, and vanilla, mixed with diced apples and spices like cinnamon. Topped generously with brown sugar, they bake into moist, tender muffins with a sweet, warming flavor and a slight crunch from the sugared topping, making them a comforting baked good suitable for breakfast or snacks.

Description

The muffins start by creaming sugar, eggs, oil, and vanilla until pale and smooth, creating a rich base. Dry ingredients such as flour, baking soda, salt, and cinnamon are mixed separately, then combined carefully with the wet mixture to prevent overmixing. The batter is stiff initially, but incorporating diced apples loosens the texture and distributes moisture throughout.

Filling paper liners most of the way, muffins are topped with brown sugar to create a sweet crust that contrasts with the tender crumb. Baking at 350 degrees for 20 to 24 minutes yields muffins with a golden surface and soft interior dotted with apple pieces.

These muffins provide a sizeable batch of 18 and offer the option to reduce sugar for a less sweet version. They work well for casual breakfasts, packed lunches, or anytime a fruit-based treat is desired.

Ingredients

Servings
  • 2 cups sugar (or use 1 1/2 cups for a less sweet muffin)
  • 2 egg
  • 1 cup neutral cooking oil vegetable, canola, or coconut oil, generic cooking oil
  • 1 Tablespoon vanilla
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups peeled cored, diced apples (around 3 apples)
  • brown sugar around 1/2 cup, for topping

Instructions

  1. Preheat oven to 350 degrees and line muffin pan with 18 paper liners.
  2. With a mixer, cream together sugar, eggs, oil, and vanilla. The mixture should be a pale yellow.
  3. In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon. Add dry ingredients to creamed mixture and mix until combined. The batter will be very thick almost like the texture of cookie dough. Mix in the diced apples. The dough will loosen up a bit when the apples are mixed in.
  4. Fill paper liners almost to the top, about 3/4 of the way full. Sprinkle each muffin top generously with brown sugar.
  5. Bake at 350 degrees for 20-24 minutes. Makes 18 muffins.

Notes

  • The nutritional information provided excludes the brown sugar topping, which varies by quantity used.
  • Reducing sugar to 1 1/2 cups can produce less sweet muffins without compromising texture.
