Description

This recipe combines a base of all-purpose flour, quick oats, brown sugar, cinnamon, baking powder, baking soda, and salt. Wet ingredients include eggs, milk or apple cider, applesauce, vegetable oil, and vanilla extract, which are mixed together and folded into the dry mix along with finely chopped apples.

The batter is portioned into muffin cups and topped with a streusel composed of oats, flour, brown sugar, melted butter, and cinnamon before baking. This topping adds a crunchy and flavorful layer contrasting the soft muffin interior.

  • 1 1/2 cups all-purpose flour
  • 1 cup quick cooking oatmeal
  • 3/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 egg large
  • 1/2 cup milk or apple cider
  • 1/2 cup applesauce unsweetened
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract pure
  • 1 cup apple finely chopped

Streusel Topping

  • 1/4 cup quick cooking oatmeal
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons brown sugar
  • 2 Tablespoons butter melted
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 400°F. Spray a 12 count muffin tin with cooking spray or line with paper liners and set aside.
  2. In a large bowl, combine the flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, milk, applesauce, oil, and vanilla.  
  4. Make a well in the center of the dry ingredients and add the wet ingredients, stirring just until combined. Fold in the chopped apple, then divide evenly between the 12 muffin cups.  
  5. Combine all of the streusel ingredients together in a small bowl, then sprinkle over each muffin. Bake the muffins for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.
