Apple-Pear Salad with Lemon Poppy Seed Dressing
Ingredients
For the dressing:
- ⅔ cup extra light olive oil
- ½ cup sugar
- ⅓ cup lemon juice fresh
- 1 ½ tablespoons poppy seeds
- 2 teaspoons shallot finely chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
For the salad:
- 1 pound butter lettuce
- 6 ounces swiss cheese shaved, or gruyere cheese
- 1 cup cashews roasted, salted
- ½ cup dried cranberries
- 1 apple thinly sliced, large
- 1 pear thinly sliced, large
Instructions
To make the dressing:
- Process all ingredients in a blender until smooth. May be stored in the refrigerator for up to one week. Serve at room temperature.
To assemble the salad:
- Toss together all ingredients in a large bowl. Serve with Lemon Poppy Seed Dressing.
Notes
The dressing may be made up to one week in advance and stored in the refrigerator. Allow it to come to room temperature and shake or whisk well before using.
To prevent the apple and pear slices from browning too quickly, sprinkle with a little lemon juice.
