Apple Quinoa Salad

This Apple Quinoa Salad balances fresh spinach, cooked quinoa, crisp apple pieces, dried cranberries, goat cheese, and chopped walnuts. The salad is tossed with a maple mustard dressing combining olive oil, lemon juice, apple cider vinegar, pure maple syrup, mustard, and garlic for a tangy-sweet flavor. The texture contrasts between the crunchy apples and nuts and the soft quinoa, creating a refreshing salad suitable for light lunches or as a side dish.

Description

Apple Quinoa Salad combines fresh spinach leaves with cooked quinoa as a wholesome base, incorporating diced apples for crispness and natural sweetness. Dried cranberries add tartness, while crumbled goat cheese offers creamy tang, and chopped walnuts provide crunch. The maple mustard dressing features olive oil, fresh lemon juice, apple cider vinegar, pure maple syrup, Dijon mustard, garlic, and seasoning, offering a balanced tangy and mildly sweet flavor that complements the fruit and cheese.

This salad suits well as a refreshing light meal or a side dish accompanying various entrees. It benefits from being tossed thoroughly to distribute the dressing evenly, enhancing all components' flavors.
