Apple Sheet Pan Pancakes

These sheet pan pancakes topped with buttery brown sugar apples and pecans are a must for fall breakfast or brunch!

Apple Topping

  • 1 apple, sliced thin
  • 1/4 cup Chopped Pecans
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter, melted

Sheet Pan Pancakes

  • 1 cup white whole wheat flour
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 cups milk
  • 2 eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 425° F. and spray a rimmed sheet pan (9x13) with cooking spray.
  2. Add the apple slices, pecans, brown sugar, cinnamon, and melted butter to a bowl. Stir together until the apple slices are coated in the butter and brown sugar. Set.
  3. In a large bowl whisk together the dry ingredients. In a separate bowl whisk together the wet ingredients. Pour the wet ingredients in with the dry and stir together until combined, careful not to over-mix.
  4. Pour the batter into the prepared sheet pan and spread it into an even layer. Top the batter with the apple mixture then bake for 15 minutes or when a toothpick inserted into the middle comes out with a few crumbs attached. Remove from the oven and cut into 6-8 squares. Serve with maple syrup, apple butter or your toppings of choice.
