This Apple Slaw combines crisp, fresh apples with a tangy, creamy dressing for a refreshing twist on classic slaw. Perfect for picnics, barbecues, or a light lunch!

Ingredients

  • ¾ cup Greek yogurt Stonyfield whole milk
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ small cabbage shredded (about 6 cups)
  • 2 large apple sliced into matchsticks
  • 1 cup carrot matchstick cut
  • 2 green onions finely chopped

Instructions

  1. In a large serving bowl, whisk together the Greek yogurt, olive oil, dijon mustard, apple cider vinegar, honey, salt, and pepper until well combined and smooth.
  2. Add the cabbage, apples, carrots, and green onions and toss to evenly coat. Set in the fridge for at least 2 hours before serving for best results.

Notes

  • Storage: Kept in an airtight container in the fridge, this apple slaw will last for up to 5 days.
