- 2 large crusty bread I used the middle slices from Calandra's panella, long slices
- 2 ounces blue cheese I used Roquefort, good quality
- 2 cant tablespoons honey
- 2 cups arugula
- ½ apple julienned, granny smith or other crisp
- ¼ cup walnuts lightly toasted
- salt to taste
- black pepper to taste
- lemon about 1 scant tablespoon, juice from ½ lemon
- 1-2 tablespoons extra virgin olive oil
