  • 1 cup wheat bran
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 egg large or extra large
  • 2/3 cup brown sugar packed
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1 cup apple shredded, about 1 large peeled Granny Smith apple
  • 1/2 cup walnuts chopped

optional add-ins

  • 1/2 cup raisins
  • 1 tsp cinnamon or apple pie spice

Instructions

  1. Preheat the oven to 375F and line your muffin pan with paper liners.
  2. Whisk together the wheat bran and buttermilk in a mixing bowl and set aside for 10 minutes while you gather the rest of your ingredients.
  3. Add the oil, egg, sugar, and vanilla to the bran mixture and whisk well.
  4. Whisk in the baking powder, baking soda, and salt.
  5. Fold in the flour, and after a few turns add in the shredded apples and walnuts. Fold until everything is evenly combined, but don't overmix your batter.
  6. Fill your muffin cups full, you will get 11 or 12 muffins. Bake for 20 minutes, until light golden and firm on top. Do not over bake, I like to check a couple of minutes early.
  7. Serve the muffins warm with butter, apple butter, peanut butter, or almond butter!

Notes

  • Muffins are best enjoyed warm, right when they come out of the oven for optimal texture and flavor.
  • If not eaten immediately, warming in a microwave for about 15-20 seconds can refresh the muffin’s softness.
