Ingredients
For the balsamic vinaigrette:
- 1/4 cup olive oil

For the salad:
- 8 cups red leaf lettuce chopped, about 1 large head

- 1/3 cup feta cheese crumbled
Instructions
- To make the balsamic vinaigrette, or in a jar with a tight-fitting lid or a bowl, combine olive oil, balsamic vinegar, Dijon mustard, and honey. Whisk or shake to combine, then season to taste with salt and pepper.
- In a large bowl, combine lettuce, apples, red onion and walnuts. Drizzle with the vinaigrette and toss to combine. Sprinkle with feta and serve immediately.
Notes
- Toast walnuts in a skillet over medium heat until golden and fragrant, stirring often (2 to 5 minutes).
- Substitute honey with pure maple syrup in the vinaigrette if desired.
- Store leftover salad undressed in the refrigerator for up to 4 days to preserve texture.
- This salad yields about 8 cups, sufficient for 4 servings of roughly 2 cups each.
