Applesauce Recipe
Description
The preparation begins by simmering peeled, cored, and quartered apples with water, sugar, and ground cinnamon until the fruit softens thoroughly. The apples release natural juices, and occasional stirring ensures even cooking without sticking. Lemon juice stirred in at the end adds brightness and helps preserve color.
Once softened, the mixture is processed in a blender or food processor to your preferred consistency, either smooth or slightly chunky depending on technique. Alternatively, manual mashing can create a rustic texture. The finished applesauce cools completely before refrigeration, where it keeps for about one week or can be frozen for several months.
This simple base can be flavored with spices like cardamom, nutmeg, or ginger according to taste. Uniformly sized apple pieces ensure even cooking, and removing all seeds prevents any bitterness. The recipe works well with a variety of apple types, from tart to sweet, allowing customization of flavor and thickness.
Adjust sugar quantity carefully to avoid oversweetening, and drain excess liquid if the cooked mixture is too watery before blending.
Ingredients
- 4 pounds apple peeled, cored, and quartered (I prefer a mix of Honeycrisp, Mcintosh, Golden Delicious, or Gala) (1.8kg
- ½ cup water (120ml)
- ⅓ cup white sugar (or brown sugar) (66g)
- ½ teaspoon ground cinnamon
- 2 tablespoons lemon juice about 1 lemon, fresh
Instructions
- In a large pot, combine the apples, water, sugar, and cinnamon. Place over medium heat and bring to a simmer.
- Cover and cook for 20 to 25 minutes, stirring occasionally, or until the apples are very soft. Stir in the lemon juice. Remove from the heat.
- Transfer the apple mixture to a blender or food processor. Remove the center of the lid and cover with a dishtowel. Process until blended to your desired consistency. (You can also mash the apples by hand with a potato masher for a chunkier apple sauce or use an immersion blender.) Let the applesauce cool completely before refrigerating in airtight containers. The applesauce can be refrigerated for up to 1 week or frozen for up to 3 months.
Notes
- Any apples work for this recipe; mixing varieties can add complexity to the flavor.
- Try adding spices such as cardamom, apple pie spice, ginger, or nutmeg to adjust flavor to your preference.
- Add sugar gradually to avoid making the applesauce too sweet.
- If the cooked apples seem watery, drain some liquid before blending to avoid thin applesauce.
- Cut apples into uniform pieces to ensure even cooking time and texture.
- Remove all apple seeds when coring to prevent bitterness in the applesauce.
