Apricot, Almond, and Thyme Grilled Brie
Description
Apricot, Almond, and Thyme Grilled Brie involves grilling a Brie wheel brushed with neutral oil over medium-high heat until the rind softens but holds intact. Almond slices, fresh thyme leaves, and cubed butter are cooked together in a foil packet on the grill, flavoring the almonds and melting the butter to form a fragrant, buttery topping infused with herbs.
The grilled Brie is topped with apricot preserves for a bright, sweet contrast, then finished with the buttery almond and thyme mixture and a drizzle of honey, enhancing the combination of creamy cheese and sweet fruit. The grill imparts a slight smoky note while softening the cheese, making it easy to spread.
This dish pairs well with baguette slices or crackers for dipping or spreading the melted Brie. It can be prepared on a grill, grill pan, or baked in the oven as alternatives. Wrapping the Brie in foil during grilling prevents it from melting through the grates. Using vegetarian-labelled cheese is recommended if dietary restrictions apply.
Ingredients
- 1/4 /4 cup almond sliced
- 1/2 /2 Tablespoon thyme fresh leaves
- 1 Tablespoon butter cubed
- salt to taste
- 2 tsp honey
- 8 oz. Brie cheese wheel
- 1 Tablespoon neutral oil of choice
- 1/4 /4 cup apricot preserves or jam
- black pepper freshly ground, flakey, optional to finish
- salt freshly ground, flakey, optional to finish
Instructions
- Preheat grill to medium-high heat, around 400-450°F.
- Place the almond slices, thyme, butter, and a pinch of salt in a foil packet; fold it closed and place it on the top rack of the grill for 10-14 minutes.
- Lightly brush each side of the brie wheel with oil. Place the brie on the grill over direct heat and cook for 3-4 minutes; flip carefully to avoid tearing the rind, and cook for an additional 3-4 minutes.
- Remove from grill and top with apricot preserves and the almond packet. Drizzle with honey.
- Serve with baguette or crackers and enjoy!
Notes
- Wrapping the Brie in foil during grilling can prevent the cheese from melting through the grill if the rind splits.
- When a grill is unavailable, a grill pan or oven baking (8-10 minutes) can be used to soften the Brie.
- Choose Brie cheese labeled vegetarian if necessary for dietary preferences.
