Apricot Brie Bites
Description
This recipe uses thawed puff pastry cut into small squares that are pressed into a greased mini muffin tin. Each pastry cup is filled with a piece of Brie cheese, which has had its rind removed for smooth melting. A teaspoon of apricot preserves tops the cheese, adding sweetness that complements the rich, creamy Brie. Baking at 350º F for 10-13 minutes results in golden, flaky pastry with melted cheese inside and a slightly caramelized fruit topping.
The Apricot Brie Bites serve well as finger foods for gatherings or light snacks. The puff pastry provides a crisp exterior texture paired with the tender, creamy cheese and bright preserves. They are best served warm to enjoy the melty cheese and fresh pastry contrast.

- 2 puff pastry sheets of
- 1 Brie cheese with the casing removed {This is easier to do if it is frozen in the freezer for 15 minutes. Just us a knife and scrape it off, 6 oz wheel
- ½ cup apricot preserves
Instructions
- Preheat oven to 350ºF and grease a mini muffin tin.
- Let the Puff Pastry thaw according to package directions and then cut each sheet into 9 pieces. Shape the squares into the muffin tins.
- Cut the brie into 1-inch pieces and place one each of the puff pastries.
- Top with about a teaspoon of apricot preserves.
- Bake for 10-13 minutes, or until Puff Pastry is lightly golden.
