Apricot Glaze for Pork/Chicken/Ham
Description
The Apricot Glaze for Pork, Chicken, or Ham is a blend of apricot jam, brown sugar, Dijon mustard, and lemon juice, accented with ground cinnamon, cloves, and salt. This mixture imparts sweet, tangy, and warm spice notes to the meat.
The glaze is applied by brushing it over uncooked meat before roasting and then repeatedly during cooking, allowing a caramelized, flavorful coating to develop on the exterior. This enhances moisture retention and adds a glossy finish.
This recipe yields approximately 3 ½ cups of glaze, enough for a large ham. For smaller roasts or poultry, halving the ingredients is recommended to avoid excess glaze.
Substitutions such as peach or orange marmalade can be used to vary the fruity base while maintaining similar glaze characteristics.
Ingredients
- 12.75 oz apricot jam (See Note 1)
- 1 cup brown sugar
- 1 cup Dijon mustard
- 2 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 1/2 tsp cloves ground
- 1/4 tsp salt
Instructions
- Mix all ingredients in a bowl.
- Brush over uncooked meat before roasting pork, chicken or ham. Baste several times during cooking.
Notes
- Substitute peach or orange marmalade for apricot jam when desired.
- This recipe makes about 3 ½ cups glaze, suitable for a large ham.
- For pork roast or chicken, consider halving the glaze ingredients for appropriate quantity.
- Apply by brushing over uncooked meat before roasting and baste repeatedly during cooking.
