Artichoke Dip Recipe

This Artichoke Dip combines chopped artichoke hearts and shallots with Greek yogurt, mayonnaise, and a blend of Parmesan and mozzarella cheeses. A topping of whole wheat or gluten-free breadcrumbs is sprayed with olive oil before baking, resulting in a warm, creamy dip with a golden, slightly crispy topping, suitable for snacking or appetizers.

Description

The recipe starts by coarsely chopping jarred artichoke hearts and shallots together to distribute flavors evenly. These are mixed with Greek yogurt and light mayonnaise to create a creamy base, enhanced with grated Parmesan and shredded mozzarella cheese for richness and melty texture. Salt and pepper season the mixture to taste.

Placed in an oven-safe dish, the dip is topped with breadcrumbs that are lightly sprayed with olive oil, promoting a crisp, golden-brown crust when baked at 400°F for about 20-25 minutes. Baking melds the ingredients and creates a warm, inviting dip with contrasting creamy and crunchy textures.

This dip is best served hot right after baking and can be prepared up to a day ahead by mixing ingredients without the breadcrumbs then storing it refrigerated. Adding breadcrumbs before baking preserves their crispness.
