  • 2 teaspoons extra virgin olive oil
  • 1 large onion (chopped)
  • 1 inch pie crust regular size, not deep, frozen
  • 15 oz can artichoke hearts ((in water) drained and quartered)
  • 4 large egg
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup parsley chopped
  • 1 1/3 cups mozzarella cheese shredded part-skim

Instructions

  1. Preheat the oven to 350F.
  2. Heat a medium skillet over medium heat. When hot add the oil and onions and sauté until golden and almost crispy, about 10 to 12 minutes, stirring. Set aside.
  3. In a medium bowl, beat the eggs with the Parmesan and parsley.
  4. Place the artichokes and the onions on the pie crust, pour the eggs over and top with mozzarella.
  5. Bake until the eggs are set, about 40 to 45 minutes.
