Description

This pizza recipe begins by activating yeast in warm water with honey, then mixing it with salt, olive oil, and gradually added all-purpose flour to form a dough. The dough is kneaded using a stand mixer with a dough hook, coated lightly with olive oil, then set in a warm place to rise until doubled in size. The rise develops flavor and improves texture.

While the dough rises, a garlic oil is prepared by gently cooking garlic cloves in olive oil to infuse flavor without browning or burning. Separately, onions are diced and cooked slowly over low heat to develop sweetness and softness. Artichoke hearts are sliced and separated, and cherry tomatoes halved. These toppings are combined with the cooked onions and coated lightly with olive oil before being placed on the shaped pizza dough.

Once risen, the dough is punched down and stretched to shape as desired. Toppings are layered over the garlic oil base, starting with onions, artichokes, and tomatoes, then goat cheese is added for creamy richness, and fresh arugula added after baking for peppery contrast.

INGREDIENTS:

For the Dough:

  • 1 ¼ ounce active dry yeast package
  • 1 cup water warm
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 teaspoon olive oil
  • 2 1/2 cups all-purpose flour

For the Toppings:

  • 1 cup onion
  • 1 can artichoke hearts canned
  • 4 oz goat cheese
  • 1 cup cherry tomatoes halved, fresh
  • 1 ½ cups arugula
  • 2/3 cup olive oil
  • 8 cloves garlic

Instructions

For the Dough:

  1. Warm bowl and combine yeast, honey and warm water.
  2. Add in salt, olive oil, and 1 ½ cups flour.
  3. Using a dough hook, mix at speed 2 for 1 minute.
  4. Still mixing on speed 2, add the rest of the flour in ½ cups until dough sticks to hook.
  5. Run on speed 2 for 2 more minutes.
  6. Use olive oil to coat the dough. Place in a greased bowl
  7. Cover with plastic wrap, place in a draft-less place to rise for about an hour or until the dough has doubled.
  8. Preheat oven to 450 degrees.
  9. Heat up ⅔ cup olive oil on a skillet. Cook garlic on medium heat. Stir, watching closely to make sure it doesn’t burn. Pour into a bowl and set aside.
  10. Heat up 2 tablespoons of olive oil, add in diced onions. Cook over medium low heat for about 30 minutes stirring frequently.
  11. Prep artichoke hearts by slicing and separating. Halve tomatoes.
  12. Place onions, artichokes and tomatoes on a baking. Drizzle in olive oil to coat.
  13. When the dough has doubled, punch down with your fist.
  14. Stretch dough out. Avoid ripping. On a greased baking sheet, press dough down to create a collar.

For the Assembly:

  1. Brush on garlic oil mixture.
  2. Arrange tomatoes, artichokes and goat cheese on crust.
  3. Bake for 15 to 20 minutes, or until toppings are golden.
  4. Add arugula.

Notes

  • Don’t skip making the garlic-infused olive oil base, as it contributes significant flavor to the pizza crust and toppings.
  • Substitute goat cheese with mozzarella, blue cheese, fontina, or shredded sharp cheddar if desired for different flavor profiles.
  • Use jarred or canned artichokes for convenience; fresh or frozen artichokes can be used but must be fully thawed or prepared first.
  • The pizza dough can be made in advance and proofed in the refrigerator if not using immediately for easier scheduling.
  • Prepared pizza dough freezes well; make a batch and freeze half for later use to save preparation time.
