Ingredients

  • 3 cups baby arugula
  • 1 teaspoon Swerve
  • ¼ cup Field greens
  • cup almonds slivered
  • 1 medium onion chopped
  • ¼ cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons butter

Instructions

  1. Preheat pan on the stove.
  2. Melt butter in pan.
  3. Add onions and Swerve to the pan.
  4. Cook onions until brown.
  5. Remove pan from stove and cool.
  6. Mix field lettuce, baby arugula, slivered almonds, and crumbled feta into a salad bowl.
  7. Place caramelized onions on top of salad mix.
  8. In a separate bowl, whisk balsamic vinegar and olive oil together.
  9. Pour vinegar and oil salad dressing on top of salad and onions.
