Arugula Salad with Sun-Dried Tomatoes and Pine Nuts

The fresh bite of this arugula salad with a simple lemon dressing, tangy sun-dried tomatoes, toasted pine nuts, and shaved Parmesan for an easy side salad to accompany any meal.

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice fresh
- 1 teaspoon honey
- ½ teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- 4 cups arugula
- ½ cup sun-dried tomatoes , drained and roughly chopped
- ¼ cup Parmesan Cheese , broken or cut into chunks
- ¼ cup pine nuts , toasted
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper.
- Add the arugula to the bowl and toss. Top with the chunks of Parmesan, sun-dried tomatoes, and toasted pine nuts. Add more pepper taste.
