Arugula Smoothie

This easy arugula smoothie uses healthy bitter greens, tart pineapple, and fatty, rich avocado for a filling, delicious vegan drink.

Ingredients

Servings
  • 2 cups milk non-dairy or dairy
  • 1 ounce arugula
  • ½ banana frozen
  • 1 cup pineapple frozen
  • ½ avocado
  • 1 teaspoon maple syrup Recommended if using dairy milk, or honey, optional

Instructions

  1. Blend all ingredients except maple syrup together until smooth.
  2. Taste, sweeten if desired.  Add more milk if the consistency is too thick.
  3. Serve immediately, or store in the refrigerator up to 3 days.
