Green salad with strawberries, pickled red onion, feta, avocado and strawberry vinaigrette

Ingredients
- 2.5 ounces arugula baby
- 2.5 ounces baby spinach
- 1.5 cups strawberries trimmed and chopped, ripe
- 1 avocado peeled and sliced, ripe
- 1/3 cup feta cheese
- 1/3 cup red onion pickled
- 1/4 cup pistachios raw shelled
Strawberry Vinaigrette:
- 2/3 cup strawberries chopped, ripe
- 1/4 cup avocado oil
- 2 Tbsp balsamic vinegar or rice vinegar
- 1.5 Tbsp honey or pure maple syrup
- 1.5 Tbsp mustard or dijon mustard, stone ground
- 1/4 tsp salt to taste, sea salt
Instructions
- If making the pickled red onions, prepare them first! They will take some time to pickle.
- While your onions are pickling, prepare the vinaigrette. To do so, add all ingredients to a small blender and blend until thick and smooth. Keep it in a sealed jar in the refrigerator until you’re ready to use it.
- Once you have your pickled red onions and vinaigrette ready, add the remaining salad ingredients to a large serving bowl. Add in desired amount of pickled red onions and strawberry vinaigrette. Toss everything together until well-combined and serve!
