Asian Chicken Wings

Asian Chicken Wings are baked drumettes and flats brushed with a spicy, sweet, and tangy sauce combining garlic, sriracha, fish sauce, honey, soy sauce, and fresh lime. They are roasted at high heat to develop crisp skin while staying juicy inside, finished with a sprinkle of sesame seeds and fresh cilantro.

Description

The preparation starts by separating chicken wings into drumettes and flats, seasoning them lightly, and baking on a wire rack to promote even cooking and crispness. A sauce of finely chopped garlic, sriracha, fish sauce, honey, soy sauce, and lime zest and juice is prepared to provide a balance of spicy heat, umami, sweetness, and citrus brightness.

After an initial bake period, wings are brushed with the sauce and returned to the oven for a brief time to glaze and caramelize the exterior. Flipping and basting ensure even coverage and glossy, sticky skin. Toasted sesame seeds and fresh cilantro are sprinkled on at the end to add texture and herbal freshness.

This method creates wings with crisp edges but tender, flavorful meat, suitable for game day, casual meals, or appetizers. The sauce is balanced with heat from sriracha and depth from fish sauce, honey's sweetness, and brightness from lime.

  • 4 pounds chicken wings

  • 2 tablespoons garlic finely chopped
  • 2 tablespoons sriracha hot sauce
  • 2 teaspoons fish sauce nam pla
  • ½ cup honey
  • 2 tablespoons soy sauce
  • 2 lime zested and juiced
  • 1 teaspoon black sesame seeds
  • 1 teaspoon sesame seeds toasted
  • cilantro fresh leaves

Instructions

  1. Set oven rack to the top third of your oven. Preheat oven to 450 degrees.
  2. Cover a large baking sheet with tin foil. Set a wire rack on top of the baking sheet (I used a cooling rack) Set aside.
  3. Cut 4 pounds chicken wingsinto sections: drums, flats and tips. Use a sharp chef's knife to cut between the joints of the drums and flats, and flats and tips. Save tips for making stock.
  4. Lay the drums and flats on the wire rack, so they are not touching. Sprinkle lightly with sprinkle of kosher salt and black pepper.
  5. Bake the wings for 15 minutes.
  6. Meanwhile assemble the sauce. In a small bowl combine 2 tablespoons garlic, 2 tablespoons sriracha hot sauce, 2 teaspoons fish sauce, ½ cup honey, s2 tablespoons soy sauce, zest and juice of 2 limes and stir to combine. Reserve ¼ cup of marinade for dipping.
  7. Remove the wings from the oven and brush them with the marinade. Return them to the oven and cook for an additional 5-8 minutes. Remove them from the oven and flip them over. Brush with marinade and cook for an additional 5-8 minutes until crisp and browned.
  8. Remove the honey sriracha wings from the oven and flip them one last time. Brush with remaining sauce.
  9. Set the oven to the broiler setting. Place the wings about 6" from the heating element and cook for 1-2 minutes or until they start to take on color and the honey sriracha sauce lacquers to the meat. Watch carefully so they don't burn.
  10. Transfer wings to a serving platter. Sprinkle with 1 teaspoon black sesame seeds, 1 teaspoon toasted sesame seeds and fresh cilantro leaves. Serve with reserved marinade for dipping or drizzling over the wings.

Notes

  • This recipe can be doubled or tripled for larger gatherings.
  • Wings can be grilled instead of baked; apply the glaze near the end of grilling to avoid flare-ups.
