  • 3-4 cups mixed greens
  • 2 chicken breast grilled and cut
  • 3/4 cup edamame cooked and shelled
  • 1/2 red pepper
  • 1 cup cucumber baby
  • 1 cup mandarin orange
  • wonton strips

Asian Citrus Vinaigrette Dressing

  • 1/4 cup orange juice
  • 1 tsp lime juice
  • 2 tbsp soy sauce
  • 2 tbsp agave nectar or honey
  • 1/4 tsp chili paste or sriracha (add more or less depending on how spicy you like it)
  • 1 tsp garlic minced
  • 1 tbsp ginger fresh and grated or ground
  • 1/4 cup sesame oil or canola oil, mixed
  • 1/4 cup grapeseed oil or canola oil, mixed

Instructions

  1. Add all salad ingredients to a large bowl.
  2. In a blender or small food processor, puree all ingredients for the dressing (except oils) until combined. Slowly add oils with blender running until all of the oil has been added.
  3. Pour dressing over salad right before serving. ENJOY!
