Ingredients
Salad
- 3-4 cups mixed greens
- 2 chicken breast grilled and cut
- 3/4 cup edamame cooked and shelled
- 1/2 red pepper
- 1 cup cucumber baby
- 1 cup mandarin orange
- wonton strips
Asian Citrus Vinaigrette Dressing
- 1/4 cup orange juice
- 1 tsp lime juice
- 2 tbsp soy sauce
- 2 tbsp agave nectar or honey
- 1/4 tsp chili paste or sriracha (add more or less depending on how spicy you like it)
- 1 tsp garlic minced
- 1 tbsp ginger fresh and grated or ground
- 1/4 cup sesame oil or canola oil, mixed
- 1/4 cup grapeseed oil or canola oil, mixed
Instructions
- Add all salad ingredients to a large bowl.
- In a blender or small food processor, puree all ingredients for the dressing (except oils) until combined. Slowly add oils with blender running until all of the oil has been added.
- Pour dressing over salad right before serving. ENJOY!
