This easy, delicious Asian-inspired broccoli salad recipe is great for a healthy lunch, picnic, or BBQ.

Ingredients
- 1 large head broccoli
- 1 medium carrot grated
- 1 granny smith apple diced
- 4 cups fresh spinach
- ¼ cup sunflower seeds
For the dressing:
- 4 tbsp. olive oil
- 3 tbsp. orange juice
- 1 tbsp. tamari or soy sauce
- 2 tsp. maple syrup
- 1 tbsp. miso paste of choice
- 1 tbsp. salt
- ½ tsp. black pepper
Instructions
- Wash and cut the broccoli into small pieces.
- Steam or blanch the broccoli until al dente. Set aside and allow to cool completely.
- In a large bowl, add the grated carrot, apple, spinach, sunflower seeds, and cooled broccoli.
- In a small bowl, whisk together the olive oil, fresh orange juice, lemon juice, tamari, maple syrup, miso, salt, and pepper, and adjust seasoning to taste.
- Dress, mix, and enjoy this healthy and bright summer salad!!
