Asian Plum Sauce
Description
This Asian Plum Sauce starts with finely chopped plums simmered with brown sugar and apple cider vinegar to form a syrupy base. Additional ingredients such as diced onion, garlic, tamari or soy sauce, and a mix of warm spices give the sauce a complex flavor profile combining sweet, sour, savory, and mildly spicy notes.
Cooking over medium-low heat reduces the sauce to a thick consistency before blending until smooth. The intense texture makes it suitable for dipping or adding glaze-like layers to dishes. The vinegar base gives it a sharp tang balanced by the brown sugar's sweetness, while spices add depth.

Ingredients
- 1 lb plum finely chopped. Should be about 2 cups
- 1 ½ cups brown sugar firmly packed
- 2 cups apple cider vinegar
- 1 ½ teaspoon salt
- 1 onion diced
- 4 cloves garlic minced or crushed
- 2 tablespoon tamari or soy sauce
- 1 teaspoon red pepper flakes dried
- ¼ teaspoon allspice each
- ¼ teaspoon ground cloves
- ¼ teaspoon nutmeg
- ¼ teaspoon cinnamon
- ¼ teaspoon ginger
Instructions
- Combine plums, brown sugar, and vinegar in a large stainless steel pot.
- Over high heat, bring to a boil. Reduce heat to medium-low and simmer for about 3 minutes, stirring. Add all other ingredients, stirring continuously and bring back to a simmer.
- Continue to simmer for 30 minutes, stirring occasionally, until thickened.
- Remove from heat.
- Use an immersion blender right in the pot, or transfer to a blender and process until sauce is smooth.
- Transfer to clean, sterilized jars leaving ½" head space for each jar. Process jars for 15 minutes in a boiling water canner.
Notes
- If thinning is needed for dipping, adjust texture with rice vinegar or soy sauce to taste.
- Ensure good ventilation during cooking as the vinegar base can emit strong fumes.
