This Asian salad dressing is one similar is similar to Benihana's ginger dressing. About 8, 2 Tablespoons per person.

Ingredients
- 1 shallot chopped
- 1/4 cup avocado oil (or peanut oil)
- 2 Tablespoons rice wine vinegar
- 1 Tablespoon minced fresh ginger
- 1 Tablespoon minced celery
- 1 Tablespoon soy sauce
- 1 1/2 teaspoons tomato paste
- 1 1/2 teaspoons sugar
- 1 teaspoon lemon juice
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 2 Tablespoons water

Instructions
- Combine all ingredients in a blender or food processor and process until almost smooth.
- Store any leftovers in an airtight container in the refrigerator for up to a week.
