Asian Soy Glaze Recipe (Sticky & Sweet Sauce)
Description
The preparation begins by gently heating sesame oil with minced garlic and ginger until they slightly brown, releasing their aromas. Then, soy sauce, honey, dark brown sugar, oyster sauce, and apple cider vinegar are added and combined.
This mixture is cooked over medium heat for 8 to 10 minutes until reduced by about half. The resulting sauce is still a bit watery when hot but thickens as it cools to a consistency similar to thick honey, suitable for glazing grilled meats, vegetables, or stir-fries.
The balance of umami from soy and oyster sauce, sweetness from honey and brown sugar, acidity from vinegar, plus fragrant sesame, garlic, and ginger creates a complex sticky sauce. Cooling for 10 minutes off heat is necessary to reach the desired thickness, avoiding overcooking which could yield an overly thick glaze.
Ingredients
- 16 g sesame oil
- 40 g garlic minced
- 12 g ginger minced
- 130 g soy sauce all-purpose
- 116 g honey
- 72 g dark brown sugar
- 40 g oyster sauce
- 24 g apple cider vinegar
Instructions
- In a small saucepan over medium heat, add the 16 g sesame oil, 40 g minced garlic, and 12 g minced ginger and cook for about 30 seconds or until it becomes slightly brown.
- Add the rest of the ingredients to the pot: 130 g all-purpose soy sauce, 116 g honey, 72 g dark brown sugar, 40 g oyster sauce, 24 g apple cider vinegar. Stir until it’s combined.
- Continue to cook for about 8-10 minutes or until the sauce has reduced by about half.
- It will be a bit watery, not candy-like, and not really coating the back of a spoon, but it will thicken as it cools down (see photo). You don’t want to keep it over the stove until it reaches final consistency because it will be too thick afterward.
- Remove the pan from the heat and let it cool for about 10 minutes to thicken into the consistency of thick honey. See photo for thickness after resting. You should be able to run a spatula or spoon down the middle and leave a line down the middle for 2 seconds before it pools back together.
- Use it on your desired recipe.
