Description

The recipe starts by trimming asparagus and tossing it with olive oil, salt, and pepper. Puff pastry sheets are rolled out and cut into squares sized to hold a few asparagus stalks. Each square is topped with a folded slice of prosciutto, several asparagus spears, and a sprinkle of shredded Gruyère cheese.

The pastry corners are folded over the filling and pressed to seal. The bundles are brushed with beaten egg to promote browning and optionally seasoned with extra salt and pepper. Baking at 425°F crisps and puffs the pastry, creating a flaky shell with a juicy, flavorful filling of tender asparagus, melted cheese, and prosciutto.

These bundles are best served immediately while warm to retain the contrast between crisp pastry and soft filling. They work well as finger foods for parties or alongside a light salad or soup.

Ingredients

  • 1 bunch asparagus ends trimmed, about 12-16 ounces
  • 1 tablespoon extra virgin olive oil
  • kosher salt
  • black pepper
  • 2 heets puff pastry thawed, frozen
  • 8 ounces gruyere cheese shredded
  • 12 lices prosciutto
  • 1 egg beaten

Instructions

  1. Preheat oven to 425°F. Line a sheet pan with parchment paper.
  2. On a lightly floured surface, roll the puff pastry out to a large rectangle about double the original size. Square off edges and cut into 6 squares. (I use a pizza cutter to do this).
  3. Toss asparagus in olive oil and season with salt and pepper.
  4. To make the bundles, place slice of prosciutto on top of the square.  I folded the prosciutto in half so that it fit nicely on the square.  Follow with 3-4 stalks of asparagus (depending on size) and 1-2 tablespoons of cheese. 
  5. Lift two opposite corners of the puff pastry squares and wrap them around the asparagus and press to seal. Brush puff pastry with egg wash. Sprinkle with more salt and pepper if desired.
  6. Bake until puff pastry is golden and puffed, about 12-15 minutes. Serve immediately.
