Instructions

Asparagus Salad

  1. In a large pot boil 1 bunch asparagus for 3-5 minutes. Rinse in cold water.
  2. In a large bowl combine 3 cups spinach, ½ cup sliced radish, 1 cup halved cherry tomatoes, ½ cup peas, ¼ cup sliced red onion, and ¼ cup feta cheese.

Lemon Vinaigrette Dressing

  1. In a small bowl whisk together ¼ cup olive oil, 1 juiced lemon, 2 tablespoons apple cider vinegar, and salt and pepper to taste.
  2. Pour the desired amount of dressing over the salad and toss together.
