Ingredients

  • 2 pounds russet potato peeled and thinly sliced
  • 3 tablespoons butter unsalted
  • 3 tablespoons all-purpose flour
  • 2 cups milk whole
  • 1/2 cup heavy cream
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups cheddar cheese shredded
  • 1/3 cup Parmesan Cheese grated

Instructions

  1. Preheat the oven to 350°F. Grease a 2-quart baking dish with butter.
  2. Layer the sliced potatoes in the baking dish, seasoning each layer with salt and pepper.
  3. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk and cream, and bring to a simmer until the sauce thickens. Remove from heat and stir in cheddar cheese until melted.
  4. Pour the cheese sauce over the potatoes. Cover with foil and bake for 1 hour. Remove foil, sprinkle with Parmesan cheese, and bake for another 10-15 minutes until golden and bubbling.
