Instructions

  1. In a food processor add the 6 anchovies in oil, 2 egg yolks*, 3 garlic cloves, and ¼ cup lemon juice. Pulse until smooth and creamy.
  2. Add in the 2 teaspoons dijon mustard, ½ cup olive oil, and ½ cup grated parmesan cheese. Continue to pulse until smooth.
  3. Serve right away or store in an airtight container in the fridge.

Notes

  • Use raw egg yolks for authentic texture and flavor, or substitute with Greek yogurt or mayonnaise for a raw-egg-free version.
