Authentic Chimichurri (Uruguay & Argentina)
Description
This chimichurri combines olive oil and red wine vinegar with aromatic parsley, pungent garlic, and fresh red chili peppers, which contribute mild heat and brightness. Dried oregano adds earthiness, complemented by salt and black pepper to balance the flavor. The sauce is mixed and rested briefly to allow flavors to meld into the oil and acid base.
Traditionally, chimichurri is used to baste chicken or steaks on the grill, adding a fresh, tangy layer during cooking rather than serving as a marinade. However, it can also be applied as a finishing sauce, spooned over cooked steak to enhance flavor contrast. The fresh herbs and acid cut through rich grilled meats and provide a lively complement.
The recipe notes recommend adjusting chili, salt, and pepper quantities to taste, allowing cooks to customize heat and seasoning level. The sauce can be made ahead and refrigerated up to 24 hours to deepen its flavor.
Ingredients
- ½ cup olive oil
- 2 tablespoons red wine vinegar

Instructions
- Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
- Chimichurri can be prepared earlier than needed, and refrigerated for 24 hours, if needed.
- Use to baste meats (chicken or steaks) while grilling or barbecuing. We don't use it as a marinade, but choose to baste our meats with chimichurri instead. However, you can use it as a marinade if you wish. Also, add a couple of tablespoons over your steak to serve.
Notes
- Customize heat by adjusting the amount of chili peppers according to personal preference.
- Season salt and black pepper to taste after mixing to ensure balanced flavor.
