Authentic Guacamole Recipes
Description
Authentic Guacamole Recipes combine fresh, ripe avocados with finely chopped Roma tomatoes, serrano chiles, onions, and cilantro. The choice of preparation method—either mashing by fork or grinding in a molcajete—affects the consistency, ranging from chunky to smooth. The serrano chiles contribute a moderate heat level, which can be adjusted by adding more chiles or leaving seeds in for extra spiciness. Salt is added to taste, balancing the flavors. Optional lime juice can be used sparingly to add acidity but should not overpower the natural flavors.
The creamy texture of the avocado contrasts with the crispness of the tomato and onion, while the herbs and chiles enliven the mix. Serving it fresh at room temperature is important, as guacamole does not keep well and browns quickly when stored. It is a versatile condiment for chips, tacos, or other dishes.
Substitutions include jalapeños for serrano peppers and red onion instead of white, allowing customization for heat and flavor variations. Preparing it just before serving preserves its vibrant taste and appearance.
Ingredients
- 3 avocado ripe
- ¾ cup Roma tomato finely chopped
- 2 serrano chile seeded and deveined, very finely chopped
- 3 onion heaping tablespoons, finely chopped
- 3 tbsp. cilantro minced
- salt usually about ¾ of a teaspoon, to taste
Instructions
- STANDARD METHOD
- Remove the flesh of the avocados.
- Mash the avocados with the back of a fork.
- Add the other ingredients and incorporate evenly.
- Add salt to taste.
- MOLCAJETE METHOD
- Add the chopped onion, serrano chile, cilantro, and salt to the molcajete.
- Grind until you have a smooth paste.
- Add the avocados to the molcajete and grind until slightly chunky.
- Add the tomatoes to the molcajete and incorporate. Do not grind the tomatoes.
- Adjust the salt.
Notes
- Serve guacamole immediately after preparation to prevent browning and loss of freshness.
- Keep guacamole at room temperature; chilling may dull the flavors.
- Adjust heat by varying the quantity of serrano chiles or by including seeds for extra spice.
- Lime juice can be added sparingly to add acidity without overpowering other ingredients.
- Jalapeños may substitute serrano peppers; red onion can replace white onion for different flavor profiles.
